Clearspring Organic Balsamic Vinegar is produced by the Mengazzoli family in Modena, using a centuries-old traditional process. Finest organic Trebbiano grapes are harvested; the juice is gently simmered to concentrate its essence, then blended with the producer’s finest wine vinegar and aged in wooden kegs. The Mengazzolis favor bay oak and larch for aging, which yields a nuanced aroma and depth of flavor without caramel. The result is a balsamic with a balanced sweet and sour profile developed through natural aging. This 250 ml bottle adds complexity to dressings, dips, sauces and marinades, enhancing salads, roasted vegetables, and grilled proteins without overpowering other ingredients.
